Ingredients
Fresh carrots- 1pound. sugar -1cup. Milk -11/2cup. cardamom power-1tsp. cashewnuts,almond flakes,raisings -2 tbsp each. Ghee -- 1tbsp.
Cooking Instructions
1.peel and cut the carrots into small circles. 2.cook them thoroughly in pressure cooker. 3.after cooking let them cool a bit,put in the blender and make into a paste(donot add water). 4.In a pot put all the sugar add 1/4 cup of water and melt the sugar. 5.Let the sugar cook for 4 mins and add carrot paste. 6.Let it cook for 10 mins on low heat. 7.Now in a small pot put ghee and fry cashews,almond flakes and raisins. 8.Add these to the carrot and sugar mixer. 9.Let the mixture cool. 10.Boil the milk and add it to the above mixture. 11.chill it and serve.You can even serve it hot. Note:donot add milk to the hot mixter while its cooking.milk may curdle and spoil the payasam(kheer).
