Bitter Guard Fry : Indian Food & Cooking Recipes

Ingredients
Bitter Guard ( Cut in thin slices ).may remove seeds if they get separated while slicing.
salt, chilli powder, curry leaves, fresh garlic , Dry coconut powder .

Cooking Instructions
To remove bitterness, clean the sliced guard in hotwater with salt in. clean for 3 4 times. Everytime sqeezeout water that contains all the bitterness. Finally squeeze away any water and put on shallow towel or papers to soak any remaining water for 15min or so.

Heat oil in pan.(half cup nearly for a pound of bitterguard). add a fistfull at once and let fry till light brown and medium crisp.(dont let fry till black or dark brown, they loose the taste and doesnt hold any salt or red chilli powder).

fry all slices.
place in a separate bowl and add desired salt and redchilli powder to taste.
fry few curry leaves in the remaining oil.
add to the prepared slices. while the slices are still hot, add the finely mashed fresh garlic and the dry coconut powder and toss.
Feel the flavour of Wonderful BitterGuard while just tossing.
Serve with rice, With Sambar.
